Vines are trained in the traditional Galician style high on granite pergolas, and yields are kept low. The wine rests on lees for ten months which adds a savoury texture to the ripe fruit and bright acidity. If you give it a bit of air before you drink it, the full spectrum of flavours reveal themselves.
